Capacity at Underground Kitchen will be between 70 and 100.
Underground Kitchen on Thursday, October 7, but doesn't want to make a hard promise.
The restaurant space at 127 E. Mifflin St. has been under construction all summer, as the old Cafe Montmartre has been refurbished to house a more extensive kitchen operation. There were two sizes they could have gone with for the space, says Hunter, and they opted for the larger, and furthermore decided to "redo everything."
"We have the tables and chairs, but the layout isn't finalized," says Hunter, but he estimates the capacity will be between 70 and 100. Underground Kitchen will not accept reservations.
Along with Hunter and brother Ben, other Underground collective members will be involved -- he names Kris Noren, Sam Kincaid and Xander Cameron as key figures in the kitchen.
As UFC has built its reputation on farm-based, nose-to-tail, seasonal fare, the menu will necessarily be, as Hunter puts it, "fluid." But, he adds, "We have most of the ideas figured out."
