Single crust pie recipes?

Does anyone have any good recipes for a good single crust (ie bottom crust only) pie? Or just a good use for one store-bought unbaked pie crust (quiche maybe?)
I had a package of 2 store bought crusts and made a pumpkin pie, so now I have one left over and I don't really want to do another pumpkin one, but I don't want to let the crust go to waste either.....

If you have apples handy, there's no law that says, you can't make a big, shallow, apple tart out of it. Or pour some chocolate pudding, or lemon merengue into it.

graham cracker or flour?

banana chocolate-mouse pie.
use a block of tofu, melted choc chips, a little raspberry vinegar, a little sugar and pour it into the crust, top with cool whip. I brought this to xmas dinner last year and no one knew it was from tofu--they all liked it.

You want to use silken Tofu-the soft stuff with the consistency like custard. This a fail-safe recipe- it's really hard to screw up!

Or do a quiche. Eggs and condensed milk, some bacon or ham and your favorite veggies. I like to pop in a little feta for good measure.

Breakfast pie! Yummy!! Just be sure to head out for some exercise afterwards!
