Delicious chicken with cashew curry
Chicken 1 kg Onion sliced 3
Ginger 1 inch piece Cashewnuts for frying 10
Garlic 3 or 4 flakes Cinamon 1 piece
Green chillies 6 Cardamom 3 pods
Poppy seeds 1 table spoon Turmeric powder Ã‚Â½ teaspoon
Cashewnuts 50 gms Salt to taste
Green Corriander leaves 1 small bunch Oil
Coconut milk extracted from 1 coconut Lime juice from 1 lime
(the first and second extraction from the same coconut scrapings)
Grind ginger, garlic and green chillies. Grind poppy seeds, nuts and green corriander leaves.Keep aside some leaves for garnishing.Cut chicken to small pieces and fry in a little oil and keep aside.In the same oil fry cinnamon, cardamom, onion and cashewnuts.Add the ground ginger garlic green chillies paste. Add turmeric powder. Fry on low fire till you can smell a rich masala flavour. Put in the lightly fried chicken pieces in it. Add the 2nd extraction of coconut milk and salt and pressure cook. If you do not have a pressure cooker use a heavy bottom vessel with a lid. When it is done add ground Poppy seed, nuts and corriander leaves mixture and the first extraction of coconut milk. When the gravy thickens add lime juice and garnish with corriander leaves and serve hot. Tasty with Bread, Roti or rice.
