Hola! The holidays can be a stressful time, particularly for those of you who are charged with cooking holiday meals. Allow me to recommend a change of pace this year. Instead of some giant roast beast, how about Xmas Tacos? Tacos are beloved by everyone, they are easy to prepare and they are a healthy alternative!
This year, give the gift of health. Give the gift of life. Give the gift of mas flavor. Give 'em a fucking taco.

Heck, you could make it a taco buffet with refried and/or whole beans and rice on the side plus a batch of guacamole, salsa, assorted peppers, thin slices of red onion, several kinds of shredded cheese and several bottles of hot sauces of different heat levels. Maybe put out a big bowl of shredded lettuce for those folks who want taco salad. Allow your guests to choose if they want hard corn shells or soft tortillas (or make "double-stuff" ala Pasquales). Give the family and friends a choice of shredded chicken, or ground beef, or if desired crumbled tofu (Boca has a good pre-made bag for just such an occasion). Sounds like a party in the making.
