Here's a tip. Take two coolers with you next time you go fishing. One for the drinks and one cooler half full of ice just for the fish. As they are caught, toss them directly on the ice. Live and kicking. Clean them within a couple of hours after you get home. I'm not as fond of crappie, their texture is too mushy for me. Northern have a distinct flavor, wye-bones and a large lateral line so I don't bother with them anymore.
But if you you enjoy lake perch and bluegills, and follow these instructions, you won't find a fresher better tasting fish in any restaurant. The fish from the Madison chain are fantastic. Beats farm raised, pig shit fed Vietnamese tilapia from your local grocer every time.
