When English Dubs and Subtitles Collide

I've been watching a few kung-fu flicks from Dragon Dynasty lately. Sometimes I'd enable both english dubs and subtitles, and I can't for the life of me understand why they are so vastly different.

I mean one of the films subtitle and dub meanings were completely opposite. Sometimes it's difficult to decipher which is accurate. I've found it incredibly distracting and difficult to follow by listening to one thing and reading another, so eventually I've chosen to watch just with english dubs and no subtitles.

At first I thought maybe the dubs were shortened to fit the context of the scene, but I've realized this simply isn't the case. Sometimes I feel the subtitles attempt to impart more content than exists in the original language. Which can be informative, but I'd rather just hear/read what's most true to the original language.
