Yeah, but jet transportation would be ridiculous to have your chef fly redeye to NY or Tokyo every morning to meet with the fishmongers and handpick the fish.

Yes, we can get decent fish, for a price, but the best best best sushi chefs (or, in fact any chefs) have relationships with the fish markets and get first pick before anyting is shipped out. No matter how much we were able to afford, it's pretty unlikely that would ever happen here. It's probably why Le Bernardin isn't opening a Madison branch either.

Unless we somehow managed to make walleye or bluegill sushi. Then we're set.

So does that mean that, say, Grant Achatz or his staff are somehow getting first pick of the shrimp, mackarel, razor clam, octopus, and steelhead roe currently on the menu at Alinea? I am guessing that they do have relationships with fishmongers, but I seriously doubt that they are hand-picking all of those items off the boat.

Ever since I was a kid living in Singapore I've eaten sushi/sashimi with my fingers. Really no need for chopsticks of any shape. I haven't tried red Sushi yet, but I am happy to know, via Kadushin, that it's not a "restaurant cum club"......jeeeezus!;)

I don't think *they* are, but I remember reading on one of the foodie blogs that their fish mongers are, specifically with them in mind. It's a layer between the chef picking off-the-boat, which someone like Ripert is famous for doing, but it's still a layer or two fewer than anyone *not* on the first-tier list in Chicago would have.

Hypothetically someone here could be paying a specialist "fish broker" for the expert first pick, but I can't even fathom how expensive that would be once air freight is factored in. I don't know precisely where Madison sushi restaurants get their stuff, but I'm pretty confident that nobody's air-freighting stuff in from NY and SF and Tokyo every morning. What we're getting is what's left after the big dogs have had their pick (and paid handsomely for it).
