Who sells low-moisture whole milk mozz cheese?

Grocery stores, recipes, cook books, CSAs, farmers' markets, organic, local, processed, corporate. It's a smorgabord!

Who sells low-moisture whole milk mozz cheese?

For pizzas, especially ones with more toppings, I'd like to use low-moisture (not fresh) whole milk mozzarella cheese. More flavor, but won't make the pie soggy.

You'd think in Wisconsin this would be easy to find, but all I've been able to find at Woodman's, Copps and Hy-Vee are either part-skim, or fresh whole milk versions.

I've seen it at Costcos out east, but not in any of our local ones.

Anyone know where I can find some?

I can't confirm, but try checking with Willy Street Co-op or another local co-op. They tend to have more options along those lines.

Jenifer St Market has a big cheese island. I've never looked for that but it's worth a shot. If they don't, you can ask them if they can order it. They're pretty accommodating about that sort of thing.

I also agree about trying the coop east or west.

Have you tried deli counters (as opposed to prepackaged)?

Boar's Head has just what you're looking for.

The best local co-ops, deli counters. Good suggestions. I'll post back here with results later.

Sargento has a pre-shredded whole-milk mozzarella at Woodman's. Roundy's brand whole milk mozz, also pre-shredded, for sale At Copp's.

Talk with the cheese/dairy manager at either Willy coop location. They take cheese pretty seriously and if they do not have it I am pretty sure the will get it. Although, I think they have what you are looking for.

Thanks, guys. Hy-Vee had it at the deli counter. I also noticed, previously, that Metcalfe's sells Boar's Head products.

I'll check the Woodman's and Copps, but I tend to stay away from pre-shredded, so that's probably why I missed it.

Pre-shredded is not the best option due to the addition of various starches but it is a bit richer in flavor compared to the part-skim mozzarella and you can always get it. Grande whole-milk mozz is often talked about in pizza forums but I've never seen it around here even though it's made by a Wisconsin cheese company. Maybe it's sold under a different label at the retail level. Whole Foods sometimes has whole milk mozz in brick form and it is really good.

Two suggestions for you.

1. Trader Joe's actually sells a quality whole milk mozzarella in a 1lb package.

2. Salvatore's Tomato Pies in Sun Prairie will sell you Grande Whole Milk Mozzarella by the lb if you ask!

3. Grande also sells whole milk mozzarella in retail packaging under the name "Piacci". Not sure where it is available.

4. Farmer John, found at multiple dane county farmers markets, is also a source of whole milk mozzarella.

Even if you find grande somewhere, pre-shredded, there are absolutely no additives at all. Just cheese, made from milk provided by Wisconsin dairy farmers.
